Apple (or Rhubarb) Bread

Ingredients

2 cups flour

1 tsp. baking soda

1 tsp baking powder

1 tsp salt

1 tsp cinnamon (none for rhubarb)

1/2 cup shortening

1 cup sugar

2 eggs

1 1/2 cups apple (/rhubarb) chopped

1/2 cup nuts

1 tsp vanilla

Instructions

  • 9x5 pan
  • Sprinkle with sugar
  • Those are the only instructions, have fun

Banana Bread

Maude

Ingredients

1 cup sugar

1/2 cup shortening

2 eggs

3 small bananas (mashed)

3 Tbsp sour milk

1/2 tsp. baking soda

2 cups flour

pinch of salt

Instructions

  • Bake slowly at 375 degrees for 50-55 minutes


"Best" Banana Bread

Ingredients

1 cup sugar

1/2 cup shortening

2 eggs - unbeaten

3 small bananas (mashed)

3 Tbsp sour milk

1/2 tsp baking soda

2 cups flour

pinch of salt

Instructions

  • This is the exact same recipe as Maude's, if you didn't notice

Bran Muffins

Ingredients

5 tsp(?) baking soda

2 cups boiling water

1 quart buttermilk

2 cups sugar

4 eggs

1 cup Crisco oil

1 Tbsp salt

5 cups flour

4 1/2 cups All Bran

2 cups Bran Flakes (Dates, Raisins, Nuts)

Instructions

  • Cream sugar, eggs, salt & oil
  • Add flour, All Bran & Flakes
  • Alternate water & buttermilk
  • Add nuts, raisins, etc.
  • Bake as needed, 400 degrees for 20 minutes
  • Store in tupperware in refrigerator

Caramel Rolls

Ingredients

1 box butterscotch pudding and pie

1/2 cup butter

1/2 cup brown sugar

Loaf of frozen bread dough

Instructions

  • Combine butter and brown sugar, gook to dissolve
  • Grease a bundt pan
  • Put nuts on bottom of pan
  • Sprinkle half package of pudding over nuts
  • Break off about eight pieces of partially frozen bread dough, put on top
  • Sprinkle remaining pudding on top of bread
  • Put brown sugar & butter on top
  • Let rise, then bake at 350 degrees for 30 mins
  • Let stand a couple minutes, then put out on a platter

Caramel-Pecan Sticky Buns

Ingredients

1 package yeast

3/4 cup warm water

1/4 cup sugar

1 tsp salt

3 3/4 to 4 1/4 cups flour

3 Tbsp vegetable oil


Filling:

1/4 cup butter or margarine, softened

1/4 cup sugar

3 tsp cinnamon

3/4 cup brown sugar

1/2 cup whipped cream

1 cup pecans

Instructions

  • Combine brown sugar & cream
  • Pour into greased 13"x9"x2" pan
  • Sprinkle with nuts
  • Slice rolls, cut side down - over pecans
  • Let rise 1 hour
  • Bake at 350 degrees for 30-35 minutes

Christmas Tree Loaves

Ingredients

1 packet dry yeast

1/4 cup warm water

1/2 cup butter

1 1/2 cups hot milk

1/2 cup sugar

2 unbeaten eggs

2 tsp salt

1/4 tsp cardamom (opt)

6 to 7 cups sifted flour


1 cup sugar

1/2 cup chopped nuts

4 tsp cinnamon

3 Tbsp butter (melted)

Instructions

  • Soften yeast in warm water
  • Melt butter in hot milk, in large bowl, then cool to lukewarm
  • Stir in 1/2 cup sugar, eggs, salt, cardamom (if desired)
  • Add sifted flour gradually to make a stiff dough
  • Knead 5 to 7 minutes
  • Place into a greased bowl
  • Let rise until light and double in bulk, about 1.5 to 2 hours
  • Punch down, then let rise 30 minutes
  • Combine 1 cup sugar, chopped nuts, and cinnamon
  • Melt 3 Tbsp butter and set aside
  • Divide dough into 3 parts
  • Roll out one part on floured surface to a triangle, 15" base, 10" high & 1/4" thick
  • Shape with hands and brush generously with melted butter
  • Sprinkle with 1/3 of sugar mixture
  • Roll up triangle, starting with one of the bottom corners, and roll along the base to form a triangle-shaped roll
  • Place on a greased baking sheet, and flatten triangle. Cut deep gashes at 3/4"intervals down each side, almost to center
  • Stretch and fold each cut section back on its side to form a branch. Cut off bottom of branch on each side to form a base
  • Cover. Repeat with remaining dough. Let rise in warm place, 30 to 45 minutes. Bake in mod. oven 350 degrees
  • Frost with vanilla glaze, decorate with red & green cherries. Can be made with glazed fruit added to dough.

Cornbread

Ingredients

1 cup cornmeal

1 Tbsp flour

1 tsp baking powder

1/4 tsp salt

1/4 tsp baking soda

1 cup buttermilk

1 egg, beaten slightly

3 Tbsp corn oil

Cranberry Bread

2 cups flour

1/2 tsp salt

1/2 tsp baking soda

1 1/2 tsp baking powder

1 cup sugar

Juice of one orange, + water to make 3/4 cups

1/4 cup butter, melted

1 egg, beaten

1 cup cranberries, halved

  • Bake at 325 degrees for 1 hour


Cranberry Fruit Nut Bread

Ingredients

2 cups flour

1 cup sugar

1 1/2 tsp baking powder

1 tsp salt

1/2 tsp baking soda

3/4 cup orange juice

2 Tbsp shortening

1 egg, well-beaten

1 Tbsp orange rind, grated

1 cup cranberries, coarsely chopped

1/2 cup chopped nuts

Instructions

  • Preheat oven to 350 degrees
  • Mix flour, sugar, baking powder, salt, & baking soda
  • Add orange juice, egg, shortening, & orange peel to dry ingredients
  • Mix until well-blended
  • Stir in cranberries & nuts
  • Grease bottom only of a 9x5 pan
  • Bake 55-60 minutes

Festive Sandwich Loaf

German Dark Rye Bread

Ingredients

3 1/2 cups rye flour (whole grain)

3 cups white flour (unbleached)

1/4 cup cocoa

2 pkgs active dry yeast

1 Tbsp caraway seeds

2 tsp salt

1/2 cup honey

2 Tbsp butter

Safflower oil

Instructions

  • Place white flour, cocoa, yeast, caraway seeds and salt in a large bowl. Stir to mix
  • Place 2 cups water, honey, & butter in a sauce pan and heat until liquids are very warm
  • Add to dry ingredients and mix until moistened
  • Beat very hard for 3 minutes
  • Stir in rye flour enough to make a soft dough
  • Knead 8-10 minutes
  • Cover & let rest for 20 minutes
  • Roll out & shape to fit 2 greased loaf pans
  • Brush tops lightly with oil, cover & let rise for 1 hour
  • Bake at 400 degrees for 25 minutes

German-Style Oven Pancakes

Ingredients

3 eggs

1/2 cup flour

1/4 tsp salt

2 Tbsp butter, softened

1/2 cup milk

melted butter

powdered sugar

lemon wedges

Instructions

  • In mixing bowl, beat eggs with fork
  • Slowly blend in flour
  • Stir in salt & butter
  • Add milk & blend, batter may be slightly lumpy
  • Grease 10" ovenproof skillet or 3 quart round baking dish
  • Pour batter into cold skillet or dish
  • Bake in pre-heated 450 degree oven, 15 mins
  • Reduce heat to 350 degrees and bake 7 minutes more - do not open oven door while baking
  • Serve immediately with melted butter, powdered sugar & lemon wedges
  • Makes 2-3 servings, may also be topped with 1 1/2 cups fruit

Hamburger Buns

Ingredients

4 cups milk

2/3 cup shortening

3 tsp salt, rounded

1 cup sugar, scant

2 packages yeast

1/4 cup warm water (for yeast)

6 cups flour

4 egg yolks

Instructions

  • Beat first 7 ingredients together
  • Add egg yolks, beat well
  • Add flour to make a soft dough, about 5 cups
  • Let rise until double in bulk
  • Pinch off dough and form into rolls, butter fingers
  • Let rise again, then bake in 375 degree oven for 15 minutes

Homesteaders Bread

Ingredients

2 eggs

1/3 cup oil

2/3 cup molasses

2 cups buttermilk

3 cups flour

1 1/2 cups oatmeal

1 cup sugar

1 1/2 cups raisins or chopped prunes

1 tsp salt

1 tsp baking powder

2 tsp baking soda

nuts if desired

Instructions

  • Mix eggs, oil, molasses, and buttermilk
  • 350 degree oven, 40 to 45 minutes
  • Spray or grease pans
  • Makes 3 small loaves

Monkey Bread

Ingredients

4 tubes buttermilk biscuits

1 1/3 cups sugar

2 tsp cinnamon

1 tsp vanilla

1 stick (1/2 cup butter)

Instructions

  • Cut biscuits into quarters
  • Roll in 2/3 cup sugar combined with 1 tsp sugar
  • Toss in greased bundt pan
  • Melt butter, then mix in remaining ingredients
  • Bring to a boil, then pour over biscuits
  • Bake at 350 degrees for 40 minutes
  • Turn immediately onto plate

Oatmeal Bread

Ingredients

1/2 cup lukewarm water

2 Tbsp + 2 tsp sugar

1 tsp salt

1 Tbsp yeast

2 Tbsp oil (rapeseed)

2 cups hot water

2 Tbsp molasses

2 cups rolled oats

Instructions

  • Let lukewarm water, yeast, & 2 tsp sugar stand for 10 minutes
  • Combine oats & hot water, 2 Tbsp sugar, salt, oil, and molasses
  • Add yeast mixture and allow entire mixture to cool
  • Add 1 cup flour
  • Beat until smooth & elastic
  • Work in 2 3/4 cups more flour
  • Knead until smooth
  • Put in greased covered bowl, allow to rise until double in bulk, about 75 mins
  • Punch down, knead again
  • Divide into 2 portions, let rest 10 minutes
  • Shape place in pans - let rise until double, about 40 minutes
  • Bake at 400 degrees for 45-50 mins

Oatmeal Raisin Bread

1 cup quick oatmeal

2 cups sifted flour

4 tsp baking powder

1/4 tsp baking soda

1/2 cup sugar

1/2 cup dry milk

1/4 cup molasses

1/4 cup shortening, melted and cooled

2 eggs beaten

Instructions

  • Pour water over oatmeal
  • Sift together flour, baking powder, baking soda, sugar, and dry milk - add 1 cup raisins
  • Mix remaining ingredients together and stir all into dry ingredients, just enough to moisten
  • Bake 1 hour at 350 degrees

Poppyseed Bread

Ingredients

1 box lemon cake mix

3/4 box poppy seeds

4 eggs

3/4 cup water

1 cup oil

1 tsp lemon flavoring or juice

Instructions

  • Mix 4 minutes at medium
  • Pour into two greased & floured bread pans
  • Bake at 350 degrees for 45-50 minutes
  • Freezes well, too!

1 cup compressed yeast

1/4 cup warm water

1/2 cup lard

1/3 cup sugar

1 1/2 tsp salt

1 cup milk

1 egg

4 cups flour

  • Dissolve yeast in water
  • Dissolve other ingredients in scalded milk
  • Cool to lukewarm
  • Add yeast mixture and one beaten egg
  • Mix in flour

1/2 cup sugar

1/2 cup lard

2 cups milk

2 eggs

6 1/2 cups flour

1 tsp salt

1 cup (cake?) compressed yeast

  • None

Rye Bread

Ingredients

1 cup warm water

1 pack dry yeast

2 cups rye flour

1 (more) cup warm water

2 tsp salt

1/4 cup brown sugar (I use less)

1 Tbsp caraway seed

white flour

Instructions

  • Mix 1 cup of warm water, yeast, and rye flour - let stand overnight
  • Combine another cup of water, salt, brown sugar and caraway seeds. Let this come to a boil, then cool
  • Add caraway mixture to rye flour mixture
  • Add white flour to make stiff dough
  • Put into bowl and let rise until doubled
  • Make into two loaves or smaller pans if you want
  • Let rise again
  • Bake at 350 degrees for 30-35 minutes

Southern Plantation Corn Bread

Ingredients

1 cup butter divided

1 egg, beaten

4 Tbsp flour

8oz sour cream

1 pint half & half

17oz corn muffin mix (2 boxes)

4 slices american cheese

6oz or 1 1/2 cups diced ham

Instructions

  • Melt 1/2 cup butter
  • Add flour and half & half (?), cook until slightly thickened
  • Crumble in cheese, blend, then cool
  • Add half & half (?), beaten egg, & sour cream

Spicy Pineapple (or Apple) Zucchini Bread

Ingredients

3 eggs

1 cup salad oil

2 cups sugar

2 tsp vanilla

2 cups shredded zucchini

1 cup well drained pineapple

3 cups flour

2 tsp baking soda

1 tsp salt

1/2 tsp baking powder

1 1/2 tsp cinnamon

3/4 tsp nutmeg

1 cup chopped nuts

1 cup raisins

Instructions

  • Combine eggs, salad oil, sugar and vanilla
  • Stir in zucchini & pineapple after first four ingredients
  • Add dry ingredients (nuts & raisins first, just until blended)
  • Bake at 350 degrees for 1 hour, in 2 greased loaf pans

Sweet Roll Dough

Ingredients

2 cakes yeast

1/4 cup lukewarm water

1 cup milk

1/4 cup butter

1/2 cup sugar

2 eggs beaten

1 tsp lemon zest

5 cups sifted flour

Instructions

  • Soften yeast in water
  • Scald milk, add butter, sugar & salt
  • Cool to lukewarm
  • Add 2 cups flour to make thick batter
  • Add yeast, eggs, lemon rind
  • Beat well 2 minutes
  • Turn out on lightly floured board, and knead for 10 minutes
  • Place in greased bowl, cover with grease and wax paper
  • Let rise until double in bulk
  • Punch down shape into rolls or cake

Sweet Rolls

Ingredients

2 cups milk (scalded)

1 1/2 - 3 tsp salt

1/2 cup sugar

1/2 cup crisco

2 pkg dry yeast

2 eggs or 2 egg yolks

6 cups flour

Instructions

  • Scald milk, then add to shortening, sugar and salt
  • Dissolve yeast in 1/4 cup hot water
  • Add 2 cups flour to the milk mixture
  • Beat with electric beater, about 2 minutes
  • Add 2 cups more flour and beat with spoon
  • Add more flour until it doesn't stick to the spoon
  • Butter bowl and let rise until double in bulk
  • Make into rolls
  • Bake at 375 degrees for 15 minutes
