Reasons to get dressed up

Bean Salad


Ingredients

• 1 can green beans (drained)
• 1 can yellow beans (drained)
• 1 small can lima or butter beans (washed)
• 1 small can kidney beans (washed)
• 1/4 cup chopped green pepper
• 1 small onion
• 3/4 cup sugar
• 1/2 cup salad oil
• 2/3 cup vinegar
• 1 tsp salt
• (optional) 6 slices bacon

Instructions

• Combine sugar, salad oil, vinegar, and salt; mix until dissolved
• (optional) Fry bacon crisp, drain well, then crumble
• (optional) Add bacon to beans
• Pour liquid ingredients over beans. Stir occasionally
• Set in refrigerator overnight

Broccoli Cauliflower Salad

Ingredients

• 3 carrots
• 1 bunch broccoli
• 1 bunch cauliflower
• 1 small bunch green onions
• 1 cup cheese (shredded)
• (optional) bacon bits

Dressing:
• 1 cup miracle whip
• 2 Tbsp vinegar
• 1/4 cup sugar (or more, to taste)

Instructions

• Mix miracle whip, vinegar, and sugar; let stand while cutting vegetables
• Cut all vegetables small; combine
• Pour dressing over vegetables just before serving
• (optional) Can mix bacon bits in, or put on top


Broccoli Salad

Ingredients

• 1-2 heads of broccoli (cut up)
• 1 cup sunflower seeds
• 1 cup raisins
• 1/2 lb bacon
• 1 cup mayonnaise
• 2 Tbsp vinegar
• 1/3 cup sugar

Instructions

• Use peeled broccoli stems, as well
• [implied] Fry bacon and cut into small strips
• [implied] Combine mayo, vinegar, and sugar
• [implied] Mix in all remaining ingredients, including peeled broccoli stems

Cauliflower Salad


Ingredients

• 1 head cauliflower
• 1 head lettuce
• 1/2 to 2/3 lb bacon
• 2 cups mayonnaise
• 1/2 cup grated parmesan cheese
• 1/2 Tbsp dried onion
• 1/4 cup sugar
• (optional) additional vegetables (broccoli, green beans, mushrooms, black olives, and green pepper are listed)

Instructions

• Fry and drain bacon
• [implied] Cut bacon into small pieces
• Let mayonnaise, parmesan, dried onion & sugar stand at room temperature for 30-60 minutes, then mix
• [implied] Dice lettuce and cauliflower
• [implied] Dice any additional vegetables
• [implied] Combine all ingredients

Cottage Cheese Salad

Ingredients

• 1 can crushed pineapple
• 1 cup sugar
• 1 lemon's juice
• 1/4 cup cold water
• 1 or 2 envelopes knox gelatin
• 1 package cottage cheese
• 1/2 pint whipped cream (or other whipped topping)

Instructions

• Combine pineapple, sugar, and lemon juice; bring to a boil
• Dissolve gelatin in cold water
• Cool pineapple mixture until cold and thickening
• Fold in cottage cheese and whipped cream

French Dressing

Ingredients

• 1 cup corn oil
• 2/3 cup sugar
• 2/3 cup catsup
• 1/4 cup [apple] cider vinegar
• 2 tsp salt
• 2 tsp paprika
• 2 Tbsp A1 Steak Sauce
• 2 Tbsp brandy
• 1 small onion (grated), or instant onion

Instructions

• Mix & chill

French Dressing - Fr. Schmitt

Ingredients

• 1/2 cup corn oil
• 1/3 cup sugar
• 1/3 cup catsup
• 1/4 cup [apple] cider vinegar
• 1 tsp salt
• 1 tsp paprika
• 1 Tbsp A1 Steak Sauce
• 1 Tbsp brandy
• 1 small grated onion

Instructions

• Mix & chill
• This is the same recipe as before

Fruit Dressing

Ingredients

• 4 egg yolks or 2 eggs
• 1/4 cup sugar
• 1/8 tsp salt
• 3/4 cup hot tart fruit juice - lemon & pineapple
• 1/2 cup whipping cream

Instructions

• [implied] Combine all ingredients exept whipping cream
• Fold in whipping cream before serving

Fruit Salad

Ingredients

• 1 can pineapple chunks (drained, reserve juice)
• 1 can mandarin oranges
• 2 lemons (sliced)
• 1 cup grapes
• 1/4 cup maraschino cherries
• 1 package vanilla pudding
• 3 Tbsp lemon juice
• orange juice

Instructions

• Cook vanilla pudding using fruit juice (lemon juice, pineapple juice, and orange juice) instead of milk
• Cool pudding
• Mix all ingredients

Lemon Dressing for Fruit

Ingredients

• 4 egg yolks or 2 whole eggs
• 3/4 cup hot fruit juice (lemon or pineapple)
• 1/4 cup sugar
• 1/8 tsp salt
• 1/2 cup whipped cream

Instructions

• Beat eggs
• Add sugar, salt, and hot juice gradually
• Cook and stir until thick
• Cool
• Fold in cream just before serving

Marshmallow Cranberries Salad

Ingredients

• 1 lb ground cranberries
• 1 cup sugar
• 18 marshmallows (cut)
• 1 cup crushed pineapple (drained)
• 1 cup cream

Instructions

• Combine cranberries, sugar, marshmallows, and pineapple; let stand overnight
• Whip cream and fold into mixture just before serving

Salad - Mrs. George Steber

Ingredients

• 20 gallon jar
• 10 lbs sugar
• 1 quart salad oil
• 2 quarts vinegar (more if desired)
• salt and pepper to taste
• sauerkraut (very fine, unspecified amount)
• cabbage (unspecified amount)
• large carrots (grated, unspecified amount)
• 2-3 celery stalks
• 5 green peppers (chopped)
• 5 red peppers (chopped)
• large bunch radishes (chopped)

Instructions

• Prepare cabbage, carrots, celery, red & green peppers, and radishes the day before
• (no additional instructions provided)

Spinach Salad


Ingredients

• 1/2 lb bacon (diced & strained
• 1 lb fresh spinach
• 1 cup bean sprouts (drained)
• 1 can water chestnuts (cut up)
• 4 hard boiled eggs (chopped)
• 1/3 cup salad oil
• 3/4 cup sugar
• 1/4 cup vinegar
• 1/3 cup catsup
• 1 Tbsp worcestershire sauce
• 1 1/2 tsp salt
• 1 small onion

Instructions

• Wash spinach, then dry it; tear in pieces and chill
• Put salad oil, sugar, vinegar, catsup, worcestershire sauce, salt, and onion in a blender for 3 seconds
• Chill dressing after blended
• Toss spinach lightly with dressing, then put dressing on [remaining ingredients excluding bacon]
• Crunch bacon on top, unless you wish to put it on salad [note: I have no idea what the "unless" means]

Taffy Apple Salad

Ingredients

• 1/2 cup sugar
• 1 Tbsp flour
• 1 egg (beaten)
• 2 Tbsp apple cider vinegar
• 9 oz can pineapple chunks (save juice)
• 8 oz Cool Whip
• 12 oz cocktail peanuts
• 4 cups apple (diced)

Instructions

• In a saucepan, combine sugar, flour, egg, vinegar, and pineapple juice over low heat until thickened
• Pour into a large bowl and refrigerate until cool
• Fold in Cool Whip, pineapple, and apple; chill
• Add nuts just before serving
