Genuine Bulgarian Yogurt

Ingredients

1-2 quarts milk

3 Tbsp yogurt starter, sour milk or buttermilk

1 tsp plain gelatin (optional)

3 Tbsp milk powder (optional)

Instructions

  • A: Prepare Milk:

Heat 1-2 quarts of milk to 180 degrees and cool to about 118 degrees F.

  • B: Culturing:

Mix in starter...can be about 3 tablespoons of your most recent batch of yogurt. (You may use bought yogurt starters, I have used sour milk or buttermilk.)....Then pour into one or several containers....(I use one cup glass containers with plastic covers)

  • C: Incubating:

Incubate at 105 to 115 degrees F, until milk has set (directions say 4-6 hours, mine clabbers in 2 hours...if you let it too long after it clabbers it gets strong) then place directly in refrigerator

Note: You may use milk of your choice. For a firmer yogurt, add to each quart of milk before heating: one tsp of plain gelatin mixed in a little water and three tablespoons of milk powder. Renew the culture monthly. When you add the gelatin and the powdered milk it should set in 3 hours
