Red Snapper - Rita & Mary


Ingredients

• 4 red snapper fillets (1.5 lbs)
• 3 Tbsp flour
• 3 Tbsp butter
• 2 Tbsp vegetable oil
• 2 Tbsp lemon juice
• 1 Tbsp parsely
• 1/2 cup roasted almonds
• 4 slices lemon for garnish

Instructions

• Dip fish in flour, then set aside
• Heat oil in pan over medium heat
• Fry 3-5 minutes, turning once
• Remove from heat and arrange on warm platter
• Add lemon juice to melted butter
• Pour lemon-butter mixture over fish
• Garnish with lemon slices, parsley, and roasted almonds
• Season to taste

Shrimp Dip

Ingredients

• 8 oz cream cheese
• 1 cup sharp cheddar cheese
• 1 onion (minced)
• 2 Tbsp fresh parsley (minced)
• 1 tsp worcestershire sauce
• 1 cup whipped cream
• Cooked shrimp (chopped) [implied]

Instructions

• Combine cream cheese, cheddar, onion, parsley, and worcestershire sauce in bowl; beat with electric mixer until thoroughly blended
• Fold in whipped cream and shrimp
• Cover and refrigerate 1 hour before serving
