Dumplings
"Potato, potato" doesn't work in writing.
Aunt Lin's Dumplings
Ingredients
• 4-5 potatoes
• 3 cups flour (+ more as needed)
• 1 egg
• 1 tsp salt
Instructions
• Boil and mash potatoes
• Mix together with remaining ingredients
• Form into balls, then drop into boiling water for ~20 minutes
• Drain, and serve
Bread Dumplings
Ingredients
• 1 cup (lukewarm) milk
• 1/2 tsp dry yeast
• 1/2 tsp salt
• 2 eggs
• 2 1/2 cups flour
• 3 slices bread (cubed)
Instructions
• Combine dry yeast and lukewarm milk, let stand 10 minutes
• Mix everything together; let set at least an hour
• Form dumplings and boil for 20 minutes in salted water
• Remove and slice
Egg Drop Dumplings
Ingredients
• flour
• egg
• salt
Instructions
• No real instructions or measurements provided, unfortunately
• Maude simply eyeballed or went by taste
• Make it fairly thick
• Put on top of or in soup, and boil
Grandma's Potato Dumplings
Ingredients
• potatoes (would sometimes use Idahoan instant mashed potatoes)
• butter
• salt
• flour
Instructions
• Make mashed potatoes as you normally would, with butter and salt
• Add flour - roughly 1:1 flour to mashed potatoes, but start lighter on flour and add as needed
• Form into balls, then drop into boiling waer for ~20 minutes
• Drain and serve
Lokse/Lekse - Slovakian/Norwegian potato flatbread
Ingredients
• 1 cup mashed potatoes
• 1 cup flour
• pinch salt
Notes: This is a versatile recipe. You can replace potatoes with sweet potatoes, avocado, etcetera. The dough freezes well - just pull it out of the freezer the night before to thaw. Pancake version is great with jams or nutella.
Instructions
• Combine mashed potatoes and flour - it will be sticky and shouldn't be dry. Add flour as needed to achieve the right texture
• Roll into sausage shape, 3/4"-1" thick
• Cut into roughly 8 rolls
Pancakes:
• On a floured surface, roll inot thin pancakes
• Fry in olive oil or butter, about 30-60 seconds on each side until browned like tortillas
Dumplings:
• Drop in boiling water; cook until they float
