Dumplings
"Potato, potato" doesn't have quite the same ring when written out
Ingredients
4-5 potatoes (likely Russett)
3 cups flour (+ additional as needed)
1 egg
1 tsp salt

Instructions
- Boil and mash potatoes
- Mix together with remaining ingredients
- Form into balls, then drop into boiling water for ~20 minutes
- Drain and eat

Instructions
- No instructions or measurements provided - grandma simply eyeballed or went by taste
- Make it fairly thick
- Put on top of or in soup and boil ~

Grandma's Potato Dumplings
Instructions
- Make mashed potatoes as you normally would with butter and salt
- Add flour - roughly 1:1 flour to mashed potatoes, but start lighter on flour
- Form into balls, then drop into boiling water for ~20 minutes
- Drain and eat
Lokse / Lekse
Slovakian / Norwegian potato flatbread
Instructions
- Combine mashed potatoes and flour - it will be sticky and shouldn't be dry. Add flour as needed
- Roll into a sausage shape, 3/4" to 1" thick
- Cut into roughly 8 rolls
Pancakes:
- On a floured surface, roll into thin pancakes
- Fry in olive oil or butter, about 30-60 seconds each side until browned like tortillas
Dumplings:
- Drop in boiling water, cook until they float

Notes: Versatile recipe, can replace potatoes with sweet potatoes, avocado, etc.
Dough freezes well - pull out of freezer the night before to thaw.
Pancake version great with jams or nutella.
