Ambrosia Chiffon Cake


Ingredients
• 5 egg yolks
• 1 cup egg whites
• 2 1/4 cups sifted cake flour
• 1 Tbsp baking powder
• 1/3 cup oil
• 1/2 cup lemon or orange juice
• 1 1/2 cups sugar
• 1 tsp salt
• 1/4 cup water
• 1/2 tsp cream of tartar
• 8 oz cool whip
• lemon (or orange) pudding
• coconut (unspecified amount, optional)
Instructions
• Bring eggs to room temperature
• Sift flour with one cup sugar, baking powder and salt
• Measure into mixing bowl egg yolks, oil, water, and lemon juice
• Add sifted dry ingredients
• Beat until smooth, about 1/2 minute at low speed of mixer or 75 strokes by hand
• Add cream of tartar to egg whites, beat until soft peaks form
• Gradually add remaining 1/2 cup sugar, beating until mixture stands in very stiff peaks. Do not under-beat
• Chop or cut coconut into shorter lengths
• Fold coconut into egg whites with large spoon or rubber scraper
• Gently fold egg yolk mixture into whites
• Pour into ungreased 10" tube pan
• Bake at 325 degrees, 1 hour or until surface springs back when touched lightly
• Invert pan and cool. When cool, loosen sides with a spatula and turn out
• Frost with lemon pudding, 8 oz cool whip - make instant pudding and let quick set, stir in cool whip
• Keep refrigerated
Apple Cake - Mary Jo Ninneman
Ingredients
• 5 cups apples peeled & cut
• 2 3/4 cups sugar
• 2 3/4 cups flour
• 1 3/4 tsp baking soda
• 1 1/2 tsp salt
• 2 1/2 tsp cinnamon
• 3 eggs, well-beaten
• 1 cup salad oil
• 2 1/3 tsp vanilla
• 1 1/2 cups nuts
Instructions
• Mix prepared apples & sugar
• Let stand a few minutes
• Sift flour, salt, soda, & cinnamon. Add to apples
• Beat eggs
• Add all ingredients to apple mixture
• 350 degrees, 50 minutes
• Glaze with powdered sugar frosting (very good)

Caramel Frosting
Ingredients
• 1 box light brown sugar
• 1/2 cup cream
• 1 stick butter or margarine
• 1 Tbsp light corn syrup
• 1 tsp vanilla

Instructions
• Boil all except vanilla, 3 minutes
• Cool to lukewarm, add vanilla, and beat until creamy
Carrot Pecan Cake - L. Walter


Ingredients
• 1 1/2 cups salad oil
• 2 cups granulated sugar
• 2 cups sifted flour
• 2 tsp baking powder
• 1 tsp baking soda
• 2 tsp cinnamon
• 1 tsp salt
• 4 eggs
• 3 cups grated raw carrots
• 1 cup chopped pecans
Instructions
• Combine oil and sugar, mix well
• Sift together remaining dry ingredients
• Stir half of dry ingredients into sugar mixture
• Blend, sift in remaining dry ingredients alternately with eggs - one at a time - mixing well after each addition
• Add carrots and mix well, then mix in pecans
• Pour into lightly oiled 10" tube pan
• Bake at 325 degrees about 70 minutes
• Cool in pan upright
• Remove from pan, frost with orange glaze
Cheese Cake
Ingredients
• 1 graham cracker crust
• 8 oz cream cheese
• 1/3 cup sugar
• 8 oz cool whip
Instructions
• Beat cream cheese & sugar with wire whisk until smooth
• Gently stir in topping
• Spoon into crust
• Put cherry or other fruit topping before serving

Chocolate Frosting - Dorothy
Ingredients
• 1 cup sugar
• 1/4 cup crisco
• 1/3 cup milk
• 1 square chocolate - cut up
• 1 tsp vanilla

Instructions
• Boil 2 minutes
• Let stand for a while & beat
Christmas Cake - Glady Meidl


Ingredients
• 8 oz cream cheese
• 1/2 lb butter or margarine
• 1 1/2 cups sugar
• 4 eggs
• 1 1/2 tsp vanilla
• 2 1/4 cups regular cake flour
• 1 1/2 tsp baking powder
• 1-2 cups candied fruit
Instructions
• I used nearly 2 cups mostly green & red cherries, and 1 cup pecans finely chopped
• I coat my tube pan with oil & I use 1/2 cup of finely grated pecans, and roll the pecans around the pan so it sticks
• Pour batter in carefully not to disturb the batter
• Blend softened cream cheese, butter, sugar, & vanilla
• Add eggs one at a time, mixing well after each addition
• Add your 2 cups of flour with your baking powder, mix well
• Use the other 1/4 cup flour to mix with fruit & nuts
• Fold in batter, then add to tube pan
• Bake at 350 degrees for 80 minutes
• Cool 5 minutes, then loosen with spatula & remove from pan
Cream Cheese Frosting - Cathy Johnson
Ingredients
• 1 stick butter or oleo (margarine)
• 1 small package cream cheese
• 2 cups powdered sugar
• Vanilla
Instructions

Danish Cringle
Ingredients
• 2 cups flour
• 1/2 cup butter
• 1 1/2 Tbsp sugar
• 1/2 tsp salt
• 1/2 cup milk (warm)
• 1/4 cup water (warm)
• 1 package dry yeast
• 1 egg - separated
• 1 can apple pie or other filling
• cinnamon
• brown sugar
• (optional - Maude's way) powdered sugar icing (to frost)


Instructions
• Mix flour, butter, sugar, and salt like pie crust
• Dissolve yeast in warm water
• Add egg yolk to warm milk
• Add yeast mixture
• Add liquid mixture to dry. Mix well
• Cover tightly and chill at least 2 hours or overnight
• Divide in half - roll each half about 18" by 6"
• Spread with beaten egg white then filling (can use other filling, but I use 1 can apple pie filling)
• Sprinkle with brown sugar & cinnamon
• Fold one long side over other, then seal ends
• Bake at 400 degrees for 20-30 minutes
• (optional - Maude's way) Frost while warm with powdered sugar icing to glaze
Filling & Frosting for Angel Food


Ingredients
• 1 1/2 tsp gelatin
• 6 Tbsp cold water
• 3 cups cream
• 3/4 cup dutch cocoa
• 6 Tbsp powdered sugar
• 1 tsp vanilla
• 1 angel food cake
Instructions
• Soften gelatin in cold water
• Heat 6 Tbsp of the cream
• Stir in softened gelatin, then chill
• Add the cocoa to remaining cream
• Beat until partially thick
• Add gelatin mixture and beat until thick
• Add powdered sugar and vanilla
• (assumed) Frost angel food cake with mixture, then fill the center hole with remaining mixture

Frosting for Poppyseed Cake - Susie Steckbauer
Ingredients
• 2 scant cups milk
• 2 Tbsp flour
• pinch salt
• 1 tsp vanilla
• 4 egg yolks
• 2 small walnut halves
Instructions
• Boil milk, combine flour, sugar, and salt
• Stir in milk
• Beat eggs well
• Remove from heat and add eggs
• Bring to a boil, then take off heat
• Add vanilla and mix well
• Let cool for a few minutes, and frost
• Add nuts (likely grated on top)

Fruit Cocktail Cake
Ingredients
• 1 egg - well beaten
• 2 cups fruit cocktail (juice & all)
• 1 1/2 cups flour
• 1 cup sugar
• 1 tsp baking soda
• 1 tsp baking powder
• 1/2 tsp salt
• 1 cup brown sugar
• 1 cup nuts

Instructions
• Sift together dry ingredients
• Mix dry with wet ingredients
• Pour into 9x12 tin
• Cover with brown sugar and nuts
• Bake at 350 degrees for 45 minutes

Krazy Cake


Ingredients
• 3 cups flour
• 2 cups sugar
• 1 tsp salt
• 2 tsp baking soda
• 1/3 cup cocoa
• 1 tsp vanilla
• 2 Tbsp vinegar
Instructions
• Use 9"x13" cake pan - No greasing pan!
• Sift flour, sugar, salt, baking soda, and cocoa together three times until well-blended, the last time into cake pan
• Make 3 holes in dry mixture in the pan
• In the first hole, put 1 tsp vanilla
• Second hole, 2 Tbsp vinegar
• Third hole, 3/4 cups salad oil
• Pour 2 cups tap water over entire mixture and mix thoroughly with fork
• Bake at 350 degrees for 40-45 minutes
Lamb Cake (Easter spice cake, made in lamb-shaped molds by Maude)
Ingredients
• 1 1/2 cups sugar
• 1/2 cup butter
• 2 eggs
• 1 cup sour milk
• 2 1/2 cups flour
• A little salt
• 1 tsp baking soda
• 1 tsp baking powder
• 1 tsp cinnamon
• 1 tsp cloves
• 1 tsp nutmeg
• 1 cup nuts
• 1 cup raisins
• 1 skewer & 2 toothpicks
Instructions
• Cream sugar, butter, & eggs
• Add milk, baking soda, baking powder, flour, salt, & spices
• Mix well without beating
• Fill face & ears of mould - these must not have nuts or raisins in
• Add nuts & raisins chopped fine
• Fill pan level, place toothpick in each ear, & skewer in neck
• Fit upper pan on & bake in moderate oven for one hour, or until upper pan comes off easily
• Let cool in lower pan


Lamb Cake Icing
Ingredients
• 1 1/2 cups white sugar
• 2/3 cup water
• 2 egg whites
• flavoring
• coconut (flaked or shredded)
• 2 raisins for eyes
• candied cherry or third raisin for mouth
• bow of some sort
• (remembered) green food coloring
• (remembered) jelly beans (for decoration)


Instructions
• Boil sugar & water
• Beat egg whites stiff
• Pour sugar over eggs, beat until cool
• (remembered) Set aside some coconut for grass to surround the lamb. The rest will be used for the lamb's wool. Mix this coconut with green food coloring.
• Ice cake all over & throw on un-colored coconut to form the lamb's wool
• (implied) Gently set the lamb in the middle of the coconut grass
• (remembered) Use green coconut to form "grass" on the serving platter around the lamb
• Use raisins for eyes & a piece of candied cherry or raisin for mouth
• Tie a bow around neck
• (remembered) Place jelly beans in the coconut grass to resemble Easter eggs
Lazy Daisy Oatmeal Cake


Ingredients
Cake:
• 1 1/4 cups boiling water
• 1 cup oatmeal (uncooked - unsure if regular or quick)
• 1/2 cup butter or margarine (softened)
• 1 cup sugar
• 1 cup firmly packed brown sugar
• 1 tsp vanilla
• 2 eggs
• 1 1/2 cups sifted flour
• 1 tsp baking soda
• 1/2 tsp salt
• 3/4 tsp cinnamon
• 1/4 tsp nutmeg
Topping:
• 1/4 cup melted butter
• 1/2 cup packed brown sugar
• 3 Tbsp light cream
• 1/2 cup chopped nuts
• 3/4 cup coconut
Instructions
• Pour water over oats, let sit 20 minutes
• Beat butter until creamy, add sugars
• Blend in vanilla & eggs
• Stir in oats
• Sift together flour, spices, salt & baking soda
• Add to creamed mixture; blend well
• Bake in greased & floured 9" square pan
• Bake at 350 degrees for 50-55 minutes
• Do not remove cake from pan
• Combine topping ingredients, and spread over warm cake
• Broil until bubbly

Magic Icing - Betty Hughes
Ingredients
• 1/2 stick butter/margarine
• 1/4 cup cocoa
• 1/4 cup sour cream
• 2 cups powdered sugar
• flavoring (of your choice, unspecified amount)
Instructions
• Melt butter & cocoa, and stir together in 1 quart saucepan
• Remove from heat, and add sour cream
• Add powdered sugar and flavoring
• Ices a 13"x8" cake

Marshmallow Frosting - Irene Kriha
Ingredients
• 1 package unflavored gelatin
• water
• dash of salt
• 2 cups sugar


Instructions
• Dissolve gelatin in 1/4 cup cold water
• Boil 3/4 cup water with dash of salt and 2 cups sugar - let come to a slow boil with cover on, and boil slowly for 5 minutes
• Remove cover and boil until it spins a thread
• Pour hot solution over dissolved gelatin and stir until well-mixed
• Let stand until cooled slightly
• Beat until it stands in peaks
• It will keep well for several days if not all used at once
• Store in refrigerator & beat up again before using
Mexican Fruit Cake


Ingredients
Cake:
• 20 oz pineapple - juice & all
• 2 cups flour
• 1 cup pecans or walnuts
• 2 tsp baking soda
• 2 cups sugar (scant)
• 2 eggs
Frosting:
• 8 oz cream cheese
• 2 cups confectioner's sugar
• 1 stick melted margarine
• 1 tsp vanilla
Instructions
• Mix first 6 ingredients together, place in 13"/9" pan
• Bake for 45 minutes or until done (most likely at 350 degrees F)
• For frosting, mix last 4 ingredients together
• Put frosting on cake while cake is still hot
Minute Fudge Frosting
Ingredients
• 1 cup sugar
• 3 Tbsp cocoa
• 1/3 cup milk
• 1/4 cup shortening
• 1/4 tsp salt
• 1 tsp vanilla
Instructions
• Mix all ingredients except vanilla in pan and bring slowly to a full rolling boil, stirring constantly
• Boil for 1 minute
• Beat until lukewarm
• Add vanilla and beat until thick enough to spread

Pineapple Easy Cake
Ingredients
• 1 can (21 oz) cherry pie filling
• 1 can (20 oz) crushed pineapple in its own juice, undrained
• 1 pkg (18-1/4 oz) white cake mix, unmixed
• 3/4 cup butter or margarine, melted
• 1 cup chopped pecans, walnuts, or almonds

Instructions
• Layer ingredients in greased 13x9-inch baking dish in order given; do not stir
• Bake in preheated 375 degree F oven. 30 to 35 minutes or until golden
Rhubarb Cake - Nona Spanbauer (Irene Kriha)

Ingredients
• butter / yellow cake mix
• 2 cups rhubarb cut fine
• 1 1/4 cups sugar
• 1/2 pint cream
Instructions
• Make cake as directed on cake mix package
• Mix sugar & rhubarb together, then put on top of cake batter
• Pour cream over all
• (implied) Bake until done, then place on cooling rack
• After 20 minutes, turn upside down (onto serving platter)
• Note: It's not clear if this was Nona's recipe given by Irene, or Irene's recipe given by Nona.
Rhubarb Strawberry Cake - Susie Bricko
Ingredients
• 1/2 cup sugar
• 2 Tbsp melted butter
• 1 egg
• 6 Tbsp milk
• 1/2 tsp salt
• 1 Tbsp baking powder
• 1 1/2 cups flour
• 4 cups rhubarb cut fine
• 1 package strawberry Jell-O
• 1/2 cup flour
• 1 cup sugar
• 1/4 cup butter
Instructions
• Beat together 1/2 cup sugar, 2 Tbsp butter, egg, milk, and sifted dry ingredients (salt, baking powder, 1 1/2 cups flour)
• When well-mixed, spread in deep pan. Dough will be thick.
• Put rhubarb on top of dough and sprinkle Jell-O on top
• Sprinkle a streusel on top made of 1/2 cup flour, 1 cup sugar, and 1/4 cup butter
• Bake at 350 degrees for 30 minutes
• Can be served with cool whip or cream


Turtle Cake
Ingredients
• 1 package German chocolate cake mix
• 14 oz package caramels
• 3/4 cup margarine / butter
• 1/2 cup evaporated milk
• 1 cup whole pecans
• 9 oz chocolate chips


Instructions
• Make cake as directed on cake mix package
• Pour 1/2 of the batter in a greased 9"x13" pan
• Bake at 350 degreese for 15 minutes
• While cake is baking, melt caramels, butter, and evaporated milk together until smooth, stirring constantly - or do in microwave
• Pour mixture over cake
• Sprinkle nuts & chocolate chips, then cover with rest of batter
• Bake 20 minutes more
• Cool & cut into squares
Velvet Crumb Cake

Ingredients
• 1 1/3 cups bisquick
• 1 egg
• 3/4 cup sugar
• 3/4 cup milk
• 3 Tbsp soft shortening
• 1 tsp vanilla

• (implied) Heat oven to 350 degrees F. Grease and flour a 9" round or 8" square cake pan
• (implied) Combine all ingredients into a cake batter

White Frosting - Mavis Paul
Ingredients
• 2 Tbsp flour
• 1/2 cup milk
• 1/2 cup sugar
• 1/2 cup butter (soft)
• flavoring (of your choice, unspecified amount)
Instructions
• Cook flour and milk until thick, and cool
• Add sugar, soft butter, and flavoring
• Beat with mix-master until fluffy

White Fruit Cake
Ingredients
• 1/2 cup butter
• 1 1/2 cups sugar
• 3 eggs
• 1 cup sour cream
• 1/2 tsp soda
• 2 1/2 cups flour
• vanilla
• salt
• 1 lemon rind grated
• 1 Tbsp lemon juice
• 1/2 cup nuts (or more)
• 1 cup raisins
• 1 cup dates
• 1 lb mixed fruit, red & green cherries


Instructions
• Line pan with waxed paper
• Cream butter, sugar, and baking soda
• Save about 1/2 cup flour and mix with the fruits, raisins, & dates
• Add beaten eggs, then sour cream, 2 cups flour, nut meats, & fruit/flour mixture
• Bake 1 to 1 1/2 hours at 350 degrees or until done
• I bake mine a little lower because it's so rich and burns easily
• Glaze if desired
• Maude, I judge the amount of fruit myself because I like a lot of it. You probably do, too.
