Broccoli Omelette

Ingredients

9 eggs

10oz frozen chopped broccoli

1/3 cup finely chopped onion

1/4 + 1/4 cup grated parmesan

2 Tbsp milk

1/2 tsp salt

1/2 tsp dried basil leaves

1/4 tsp garlic powder

1 medium tomato

Instructions

  • Cut tomato into 6 slices
  • Beat eggs with hand until light and fluffy
  • Stir in broccoli, onion, 1/4 cup cheese - milk, salt, basil & garlic powder
  • Pour into 11"x8"x2" greased pan, bake [?]
  • Arrange tomato slices on top, sprinkle with 1/4 cup of cheese
  • Bake uncovered at 325 degrees until set, 25-30 minutes

Egg Casserole

Ingredients

3 cups cubed ham

1/2 lb cheddar, grated

3 cups cubed french bread

3 Tbsp melted butter

3 Tbsp flour

1 tsp dry mustard

4 eggs

3 cups milk

Instructions

  • Grease cake pan lightly
  • Make a layer of ham, cheese and bread
  • Drizzle melted butter on top
  • Combine flour, mustard, sprinkle over ham & cheese
  • Beat eggs, add milk and pour over ingredients in pan
  • Cover and refrigerate at least 4 hours, up to 24 hours
  • Bake at 350 degrees for one hour or until fluffy

Egg Dish - Fettuccine (*Carbonara)

Ingredients

3 egg yolks, beaten

1/4 cup cream

1 cup parmesan cheese

Spaghetti / Fettuccine

Bacon

Instructions

  • Cook pasta of choice, and fry bacon
  • Mix egg yolks, cream, parmesan together
  • Put pasta and bacon into egg mixture, mix well
  • Serve with a salad for a full meal

Egg & Cheese Soufflé

Ingredients

5 slices of fresh buttered bread

1/2 lb cheese (longhorn style)

Butter

5 eggs, beaten

2 cups milk

1/2 tsp salt and pepper

Garlic

Instructions

  • Cube slices of buttered bread
  • Grate cheese
  • Put in 8x11 well-buttered pan
  • Beat eggs, adding milk, salt & pepper as well as garlic if desired
  • Pour egg mixture over cheese and bread
  • Bake at 350 degrees for 45-60 minutes
