Breakfast of champions
Broccoli Omelette


Ingredients
• 9 eggs
• 10 oz frozen chopped broccoli
• 1/3 cup finely chopped onion
• 1/2 cup grated parmesan, divided evenly
• 2 Tbsp milk
• 1/2 tsp salt
• 1/2 tsp dried basil leaves
• 1/4 tsp garlic powder
• 1 medium tomato
Instructions
• Cut tomato into 6 slices
• Beat eggs by hand until light & fluffy
• Stir in broccoli, onion, 1/4 cup parmesan
• Stir in milk, salt, basil, & garlic powder
• Pour into an 11"x7 1/2"x2" greased pan
• Arrange tomato slices on top
• Sprinkle with remaining 1/4 cup parmesan
• Bake uncovered for 25-30 minutes at 325 degrees F, until set
Egg Casserole
Ingredients
• 3 cups cubed ham
• 1/2 lb cheddar (grated)
• 3 cups cubed french bread
• 3 Tbsp melted margarine / butter
• 3 Tbsp flour
• 1 tsp dry mustard
• 4 eggs
• 3 cups milk
Instructions
• Grease cake pan lightly
• Form a a layer of ham, cheese, and bread in the greased pan
• Drizzle melted margarine or butter over the top
• Combine flour and dry mustard
• Sprinkle flour mixture over ham and cheese
• Beat the eggs, then add milk
• Pour the milk mixture over the ingredients in the pan
• Cover and refrigerate at least 4 hours, up to 24 hours
• Bake at 350 degrees for one our, or until fluffy


Fettuccine Egg Dish [*Carbonara-esque]
Ingredients
• 3 egg yolks (beaten)
• 1/4 cup cream
• 1 cup parmesan
• spaghetti or fettuccine
• bacon

Instructions
[Note: Instructions provided were minimal, so assumed details were added to reflect a carbonara-like dish]
• Cook long pasta of choice according to package; reserve some pasta water
• Cut bacon into thin strips, and fry until crisp
• Whisk together egg yolks, cream, and parmesan until well combined
• Add cooked spaghetti and some pasta water to skillet; toss to combine
• Add egg mixture and toss to coat; toss continuously to avoid scrambling the eggs
• Continue cooking for about a minute, until sauce is creamy; add pasta water if sauce gets too thick
Egg & Cheese Souffle

Ingredients
• 5 slices of fresh, buttered bread
• 1/2 lb cheese (longhorn style)
• butter
• 5 eggs, beaten
• 2 cups milk
• 1/2 tsp salt and pepper
• garlic (if desired)
• ham (cubed, if desired)
Instructions
• Cube slices of buttered bread
• Grate cheese
• Put in 8"x11" well-buttered pan
• Beat 5 eggs well, adding 2 cups milk, 1/2 tsp salt & pepper, and some garlic if desired
• Add ham cubes if desired
• Pour egg mixture over cheese and bread
• Bake at 350 degrees F for 45-60 minutes
• Dish can be made the day before, put in the refrigerator, and covered until ready to bake. Bake uncovered.
