Refrigerator Pickles

Ingredients

• 8 cups cucumbers (sliced) (2 quarts)
• 1 1/2 Tbsp salt
• 1 cup onions (sliced)
• 1 cup celery
• 1 cup green peppers
• 2 cups sugar
• 1 cup vinegar
• 1 tsp celery seed

Instructions

• [implied] cover vegetables in water
• Soak vegetables (cucumber, onions, celery, green pepper) with salt for at least 90 minutes, or overnight
• Drain vegetables
• Boil sugar and vinegar together
• Pour sweetened vinegar over vegetables
• Add celery seed; mix well

Sliced Pickles - Mary Smith

Ingredients

• dill
• onions (sliced)
• cucumbers (sliced)
• 1 cup sugar
• 1 cup white vinegar
• 1 Tbsp pickling salt

Instructions

• Put dill, onions, and cucumbers in sanitized jar
• Boil sugar, vinegar, and salt together
• Pour mixture over pickles
• Can and seal immediately according to hot canning best practices
