It's nice to veg out after a long day

Baked Beans

Ingredients

4 lbs beans

1 cup brown sugar

1 cup molasses

4 Tbsp dry mustard

1 onion, grated

8 tsp salt

1 tsp pepper

1 lb bacon

Instructions

  • Liquid to almost cover beans
  • Bake about 4 hours on medium

Cauliflower

Ingredients

1 head cauliflower

1/2 cup mayonnaise

1 tsp yellow mustard

1 Tbsp chopped onion

Cheese

Instructions

  • Cook cauliflower until almost done
  • Spread mixture of all mayonnaise, mustard, and onion on cauliflower
  • Sprinkle cheese on top
  • Microwave 5 minutes

Hot German Potato Salad

Ingredients

12 potatoes

1/2 medium onion, chopped

Salt to taste

1/2 lb bacon

3/4 cup vinegar

3/4 cup sugar

1 cup water

2 Tbsp flour

1 hard boiled egg

Parsley

Instructions

  • Cook potatoes; do not allow to get mushy
  • Peel & slice potatoes while still warm
  • Add onion & salt, set in a warm place
  • Cut bacon in small pieces, cook until crisp
  • Drain off all but 3 Tbsp bacon grease
  • Take off fire; add mixture of vinegar, sugar, water & flour, then return to fire - cook until thickened
  • Add bacon-vinegar mixture to potatoes
  • Sprinkle top with chopped egg and parsley
  • Serve warm

Stewed Tomatoes

4 quarts prepared tomatoes

1/2 cup chopped onions

1 cup chopped celery

1/4 cup chopped green pepper

1 Tbsp sugar

2 tsp salt

Instructions

  • Cover & cook 10 minutes - process for 15 minutes, 10lb pressure pts.

Sweet Potato Soufflé

Ingredients

4 cups mashed sweet potatoes

1/2 cup sugar

2 eggs

1/2 cup milk

1/2 tsp salt

3 Tbsp butter

1 tsp vanilla


Topping:

1 cup brown sugar

1/2 cup flour

1/3 cup soft butter

1 cup chopped pecans

Instructions

  • Butter cake pan
  • Bake at 350 degrees for 30 to 40 minutes
